Creamy Egg Mayonnaise

Instructions
  1. Place the ingredients in the order listed into a wide mouth jar or container.
  2. Place the stick blender at the bottom of the jar.
  3. Turn the blender on and very slowly move the blender up to the surface of the jar, about 1 minute (moving the blender slowly is the key to a creamy consistency).
  4. Store for up to 5 days in the fridge.

Zucchini & Walnut Salad

Instructions
  1. Whisk dressing ingredients together and let rest to develop flavours.
  2. Split the zucchini length ways and scoop out the seeds. Cut into 2 cm pieces.
  3. Heat olive oil in a fry pan over medium heat. Add zucchini and cook until brown but still firm.
  4. Place salad mix in a bowl, add chives, parsley and zucchini. Toss together.
  5. Roast nuts briefly in the same pan and season with salt and pepper.
  6. Spoon over nuts and drizzle over the dressing before serving.

  1. Thread each salmon strip through a skewer
  2. Roll each salmon skewer in the basil and pepper.
  3. Slice prosciutto into strips and wrap around each salmon skewer
  4. Fry the skewers in butter in a fry pan.
