Instructions
  1. Whisk dressing ingredients together and let rest to develop flavours.
  2. Split the zucchini length ways and scoop out the seeds. Cut into 2 cm pieces.
  3. Heat olive oil in a fry pan over medium heat. Add zucchini and cook until brown but still firm.
  4. Place salad mix in a bowl, add chives, parsley and zucchini. Toss together.
  5. Roast nuts briefly in the same pan and season with salt and pepper.
  6. Spoon over nuts and drizzle over the dressing before serving.
